Unless people have an SSB (& FM) 2m &/0r 70cm base station radio, or unless they have a shack in a box radio, (One that covers HF, VHF & UHF.) Most people do not have base radios for use on VHF & UHF. Band specific 2 & 70cm base radios are not very common & rather expensive when you do find them.
The shacks in a box are a compromise radio when compared to a stand alone, band specific radio.

I think I'll setup the handheld in the car with a good aerial - easiest way to get started plus there's limited space in a '12 Corsa for a mobile.

I could then get a mobile for home with a decent aerial attached to the shed - any suggestions on aerials, detail I should look for or what I should avoid?

There are plenty of cheapish white sticks about, add some half decent RG-2313 & you have a reasonable set up...
