Given that there are around six thousand possible frequencies in the NATO military UHF air band, and more at VHF (30-68), and no scanner can scan all those quickly enough without missing some transmissions, you have to scan frequencies likely to be used in your area.
Try joining www.milscanners.org to find out more.

Cardiff Radar have a UHF output on 251.375, so that would be a good place to start.

Then there is the question of what equipment and antenna you are using.

Danger Area EGD119 (Lilstock / Bridgwater Bay) is nearby, used by Navy helis from Yeovilton.
There is a control/observation tower on the coast at 51.201ºN 3.2019ºW, photos on www.geograph.org.uk https://www.geograph.org.uk/photo/2379257, I've never found any specific frequencies for it though.

There is a NOTAM for something happening on the 27/28 March near Burnham:

H0854/19: Exercises will take place
Q) EGTT/QWELW/IV/BO/AW/000/120/5113N00303W005
AIR EXER. MULTIPLE FAST JET ACFT AND HEL WILL CONDUCT HIGH ENERGY

(KINGTON, HEREFORDSHIRE). PROFILES MAY INVOLVE DYNAMIC LATERAL AND
VERTICAL MANOEUVRING OF AIRCRAFT AT SPEEDS OF UP TO 450 KNOTS IAS.
ACFT MAY BE UNABLE TO COMPLY WITH RAC. FOR FURTHER INFO AIC Y056/2017

I’m using a uniden 125XLT so I’m not even sure if that would do the job for recieving them.

The uniden 125XLT receives both the VHF and UHF airbands (am) and also the nfm UHF frequencies used by airport ground services . Reception will be improved considerably by using an external antenna fitted in the loft or outside as high as possible

Park up on Selworthy Beacon, you can get St Athan from up there easily.
ATIS is 340.45
Twr UHF relay for ground vehicles is 409.825
